Mango Lassi with Coconut

In my humble opinion, Indian cuisine is underrated and should be more appreciated and popularized by hipsters all over the world. It is a bit complicated to repeat it at home, which keeps things interesting, it has a lot of traditionally vegetarian dishes, it is not expensive and it makes you warm and cozy during the winter.

Mango Lassi is an Indian traditional refreshing beverage that has a sweet, creamy flavor and is often enjoyed as a dessert or snack. It doesn't make you warm, but it is very tender and smooths the taste of all the spices. Also, it is extremely easy to make! In my version, I added coconut milk into the recipe to make it taste even richer.

What do you need for Coconut-Mango Lassi?

  • canned mango, 450g (I recommend using canned one even if you have a decent mango where you live).

  • Yogurt medium fat(I used 4%).

  • regular milk

  • Coconut milk

  • cardamom

  • Saffron

How to make Cocunat-Mango Lassi?

For two servings, you need to place all mango from the can into a blender (leave a couple of pieces for decoration). Add 6 tablespoons of yogurt, 50 ml. of regular milk, 50 ml. of coconut milk, some mango syrup from a can, and a pinch each of cardamom and saffron. Then start blending until the drink reaches an even consistency, and pour it into glasses.

If you do not like coconut, you can replace it with regular cream, it will add the tenderness to lassi without extra flavors.

Enjoy!
